Dxtory allows you to capture audio from pretty much any audio device, and you can capture audio from multiple devices at the same time.

Use Dxtory or go into recording devices in windows and put listen on, then just record your boxes/headphone.

For Macs: Camtasia for video/audio desktop recording. Audio strictly can be done with WireTap Studio/Pro which allows for some customization as to what apps to record audio from and mixers much like WinAmp.
