Saplings of any variety/quantity
Vines of any quantity
Potatoes

Ill be honest and say you're better off advertising in trade chat in game. You're not going to get much business for what you're offering, anyway. Farmers are an incredibly common profession, and people that would hire one for anything usually run a town that already has a farmer. If you're looking to make money as a farmer, sell stacks of leather. They usually go for a decent price.

Once I get to that point I will definitely be selling leather stacks. Until I get there though I'm looking to expand beyond wheat and log/leaf harvesting

As a farmer digging serves me little purpose. At this time I must decline any extended time digging tunnels or holes
