Does the spoutcraft client happen to work on the server? I like it's UI so I was just wondering.

Well it is only 1.2.5, so no but there are serval ways hoow to get a dev build for 1.3 and use that, but be warned it is still buggy and is a little tricky to set up, there are several topics here about it I would give you a link but I'm on my phone :p

You can just select Latest build in the launcher now.

Yeah, I played a few months ago and the spoutcraft UI had a mana bar, I quite liked that but for some reason it no longer has it.

It's not a feature of spout it's done from some server based plugins. It's just a matter of updating the plugins which we haven't gotten around to yet.
