1 : It can be quite hard to get a good amount of enderpearls since endermen are hard to come by. So maybe make it so that Alchemists can use cauldron to make enderpearls. The recipe would be medium to high cost in items though, because if it's too simple, then making endstone would end up being easier too.

2 : Enchanters should be able to sell enchanted items, simply because having to go through a smith of merchant to sell those can be annoying sometimes if you want to refill your shop, but the smith/enchanter is offline and you're stuck with an empty shop.

iirc there wasn't a way to make them able to sell ONLY enchanted versions (short of entering every possible enchant combo).
Though this could be wrong. I heard this a long while back and who knows what's changed.
