Bug Multiple HP bar skeletons

I found this skeleton with 2 HP bars:

Afterwards it said 208 HP and died in one hit making me think that the 2nd one is the valid one.

It happens to all mobs, not exactly sure what causes it but I see it on mobs mostly after the night is over during day.
